  • 1 cup red lentils
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • Salt to taste
  • Black pepper to taste
  • 2 cups spinach
  • 1 tablespoon lemon juice

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and carrots; sauté until soft.
  3. Stir in the garlic, cumin, coriander, and paprika. Cook for an additional minute.
  4. Add the lentils, broth, and diced tomatoes to the pot.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes until lentils are tender.
  6. Stir in the spinach and lemon juice. Season with salt and pepper.
