  • 1 pound chicken thighs, boneless and skinless
  • 4 cups chicken broth
  • 2 cups water
  • 1 tablespoon soy sauce
  • 2 teaspoons sesame oil
  • 1 tablespoon ginger, minced
  • 3 cloves garlic, minced
  • 1 tablespoon sriracha
  • 1 cup mushrooms, sliced
  • 1 cup bok choy, chopped
  • 2 cups noodles
  • 1 green onion for garnish

Instructions

  1. In a large pot, combine chicken, chicken broth, water, soy sauce, sesame oil, ginger, garlic, and sriracha. Bring to a boil.
  2. Reduce heat and simmer for 20 minutes or until chicken is cooked through.
  3. Remove chicken and shred it using two forks. Return shredded chicken to the pot.
  4. Add mushrooms and bok choy, cooking for an additional 5 minutes.
  5. Cook noodles according to package instructions and add to the soup.
  6. Serve hot, garnished with green onions.
