Spicy Salmon Bowls with Coconut Rice

  • 2 cups jasmine rice
  • 1 can coconut milk
  • 1 pound salmon fillets
  • 2 tablespoons sriracha sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger, grated
  • 1 cup green onions, chopped
  • 2 tablespoons sesame seeds

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a pot, combine the rice and coconut milk, and bring to a boil.
  3. Reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and tender.
  4. While the rice cooks, heat olive oil in a skillet over medium heat.
  5. Season the salmon with sriracha, soy sauce, garlic powder, and grated ginger.
  6. Add the salmon to the skillet and cook for about 4-5 minutes on each side, or until cooked through.
  7. Once the rice is done, fluff with a fork and mix in chopped green onions.
  8. Serve the salmon over the coconut rice, garnished with sesame seeds.

Notes

  • For more flavor, marinate the salmon for 30 minutes before cooking.
  • Adjust the spice level by adding more or less sriracha.
