- 1 cup sushi rice
- 2 cups water
- 1 pound fresh salmon, skin removed
- 1/4 cup mayonnaise
- 2 tablespoons sriracha
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1 avocado, sliced
- 1/4 cup green onions, chopped
- 1 sheet nori, cut into strips
- Preheat the oven to 375°F (190°C).
- Rinse the sushi rice under cold water until the water runs clear. Combine rice and water in a rice cooker and cook according to the manufacturer’s instructions.
- While the rice is cooking, cut the salmon into small pieces and mix it with mayonnaise, sriracha, soy sauce, and sesame oil in a bowl.
- Once the rice is done, spread it evenly in a greased baking dish.
- Layer the salmon mixture over the rice.
- Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through.
- Remove from the oven and top with sliced avocado and chopped green onions.
- Serve with nori strips on the side for added texture.
Notes
- For extra flavor, you can add sesame seeds on top before baking.
- Adjust the spiciness by adding more or less sriracha to the salmon mixture.
