  • 2 large eggs
  • 1/2 cup vegetable oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix pumpkin puree, sugar, eggs, and vegetable oil until smooth.
  3. In another bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
  4. Gradually add the dry ingredients to the pumpkin mixture and stir until just combined.
  5. Fill muffin cups halfway with the batter, then add a spoonful of cream cheese and cover with more batter.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.
