  • ½ cup mango puree
  • ½ cup strawberry puree
  • 2 tablespoons tequila
  • 2 tablespoons lime juice
  • 1 teaspoon baking powder
  • ½ teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake tin with liners.
  2. In a bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs, mango puree, strawberry puree, tequila, and lime juice, mixing until combined.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture and mix until just combined.
  6. Fill the cupcake liners two-thirds full with batter.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  8. Let cool completely before frosting.

  • For a non-alcoholic version, omit tequila and replace with additional lime juice.
