- 2 medium sweet potatoes
- 1/2 cup crumbled feta cheese
- 1/4 cup honey
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Preheat the oven to 400°F (200°C).
- Peel and slice the sweet potatoes into 1/2 inch rounds.
- Drizzle olive oil, salt, and pepper over the sweet potato rounds and toss to coat.
- Arrange on a baking sheet in a single layer and bake for 25-30 minutes until tender.
