- 2 medium sweet potatoes
- 4 slices turkey bacon
- 1 cup chicken ham, diced
- 1 red bell pepper, diced
- 1 onion, diced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- Salt to taste
- Black pepper to taste
- Peel and dice the sweet potatoes into small cubes.
- In a large skillet, heat olive oil over medium heat.
- Add the turkey bacon and cook until crispy, then remove and set aside.
- In the same skillet, add the diced onion and bell pepper, cooking until softened.
- Add the sweet potatoes to the skillet and season with paprika, salt, and pepper.
- Cover and cook for 10-15 minutes, stirring occasionally, until the sweet potatoes are tender.
- Stir in the diced chicken ham and crispy turkey bacon.
- Cook for an additional 5 minutes to heat through.
- Serve warm.
