Sweet Potato Breakfast Hash

A delicious and hearty breakfast option that combines sweet potatoes, turkey bacon, and chicken ham.

Ingredients

  • 2 medium sweet potatoes
  • 4 slices turkey bacon
  • 1 cup chicken ham, diced
  • 1 red bell pepper, diced
  • 1 onion, diced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Peel and dice the sweet potatoes into small cubes.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add the turkey bacon and cook until crispy, then remove and set aside.
  4. In the same skillet, add the diced onion and bell pepper, cooking until softened.
  5. Add the sweet potatoes to the skillet and season with paprika, salt, and pepper.
  6. Cover and cook for 10-15 minutes, stirring occasionally, until the sweet potatoes are tender.
  7. Stir in the diced chicken ham and crispy turkey bacon.
  8. Cook for an additional 5 minutes to heat through.
  9. Serve warm.
