  • 1 can black beans, drained
  • 1 can kidney beans, drained
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 packet taco seasoning
  • 2 cups beef broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup bell pepper, chopped

Instructions

  1. In a large pot, brown the ground beef over medium heat.
  2. Add the onion, bell pepper, and garlic; cook until softened.
  3. Stir in the taco seasoning and cook for another minute.
  4. Add the black beans, kidney beans, corn, diced tomatoes, and beef broth.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Serve hot, topped with cheese and sour cream if desired.
