  • 1 can (14 ounces) coconut milk
  • 4 cups vegetable broth
  • 1 tablespoon soy sauce
  • 1 medium red bell pepper, sliced
  • 2 cups snow peas
  • 1 cup mushrooms, sliced
  • 2 cups spinach
  • 2 tablespoons lime juice
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. In a large pot, heat the coconut oil over medium heat. Add the onion and sauté until translucent.
  2. Add the garlic and ginger, cooking for another minute until fragrant.
  3. Stir in the red curry paste, cooking for 2 minutes.
  4. Pour in the coconut milk and vegetable broth, bringing to a simmer.
  5. Add the soy sauce, bell pepper, snow peas, and mushrooms, and cook for 5-7 minutes.
  6. Finally, stir in the spinach and lime juice, cooking until the spinach wilts.
