- 8 ounces rice noodles
- 4 slices turkey bacon
- 1 tablespoon vegetable oil
- 1 cup onion, diced
- 2 cloves garlic, minced
- 2 tablespoons red curry paste
- 4 cups chicken broth
- 1 can (13.5 ounces) coconut milk
- 2 cups vegetables (bell peppers, carrots, etc.)
- 2 tablespoons fish sauce
- 1 tablespoon lime juice
- Fresh cilantro for garnish
- Cook the rice noodles according to package instructions. Drain and set aside.
- In a large pot, cook turkey bacon until crispy, then remove and crumble.
- In the same pot, heat vegetable oil and sauté onion and garlic until soft.
- Add red curry paste and cook for 2 minutes.
- Pour in chicken broth and coconut milk. Bring to a simmer.
- Add vegetables and cook until tender.
- Stir in fish sauce and lime juice.
- Combine with the cooked noodles and top with crumbled turkey bacon and cilantro.
Notes
- Adjust the heat by adding more or less curry paste.
- Feel free to add your favorite vegetables.
