Thai Red Curry Noodle Soup

Enjoy a delicious bowl of Thai Red Curry Noodle Soup made with turkey bacon for a comforting meal.

  • 8 ounces rice noodles
  • 4 slices turkey bacon
  • 1 tablespoon vegetable oil
  • 1 cup onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons red curry paste
  • 4 cups chicken broth
  • 1 can (13.5 ounces) coconut milk
  • 2 cups vegetables (bell peppers, carrots, etc.)
  • 2 tablespoons fish sauce
  • 1 tablespoon lime juice
  • Fresh cilantro for garnish

Instructions

  1. Cook the rice noodles according to package instructions. Drain and set aside.
  2. In a large pot, cook turkey bacon until crispy, then remove and crumble.
  3. In the same pot, heat vegetable oil and sauté onion and garlic until soft.
  4. Add red curry paste and cook for 2 minutes.
  5. Pour in chicken broth and coconut milk. Bring to a simmer.
  6. Add vegetables and cook until tender.
  7. Stir in fish sauce and lime juice.
  8. Combine with the cooked noodles and top with crumbled turkey bacon and cilantro.

Notes

  • Adjust the heat by adding more or less curry paste.
  • Feel free to add your favorite vegetables.
