  • 4 cups vegetable broth

  • Fresh basil, for garnish

Instructions

  1. Cook the rice noodles according to package instructions, then drain and set aside.
  2. In a large pot, heat a bit of oil and sauté the red curry paste until fragrant.
  3. Add the coconut milk and vegetable broth, bringing it to a simmer.
