Thai Red Curry Noodle Soup

  • 4 slices turkey bacon
  • 2 cups vegetable broth
  • 1 can coconut milk
  • 2 tablespoons red curry paste
  • 1 tablespoon soy sauce
  • 3 cups mixed vegetables (bell peppers, carrots, broccoli)
  • 8 oz rice noodles
  • 1 tablespoon lime juice
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, cook the turkey bacon until crispy, then remove and chop.
  2. Add the vegetable broth, coconut milk, and red curry paste to the pot. Stir to combine.
  3. Bring the mixture to a simmer, then add the mixed vegetables and cook for 5-7 minutes until tender.
  4. Prepare the rice noodles according to package instructions and add to the soup.
  5. Stir in lime juice and chopped turkey bacon. Season with soy sauce.
  6. Serve hot, garnished with fresh cilantro.
