- 2 cups Brussels sprouts, halved
- 1 pound carrots, sliced
- 1 large red onion, cut into wedges
- 3 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon dried thyme
