  • 1 cup cooked turkey bacon, chopped
  • 1 cup black beans, rinsed and drained
  • 1 cup corn, drained
  • 1 cup bell peppers, diced
  • 1 cup shredded cheese
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 package egg roll wrappers
  • oil for frying

Instructions

  1. In a bowl, combine turkey bacon, black beans, corn, bell peppers, cheese, cumin, and chili powder.
  2. Lay out an egg roll wrapper with a corner facing you.
  3. Place 2-3 tablespoons of the filling in the center of the wrapper.
  4. Fold the bottom corner over the filling, then fold in the sides, and roll tightly to seal.
  5. Heat oil in a deep pan over medium heat.
  6. Fry the eggrolls in batches until golden brown, about 3-4 minutes each.
  7. Drain on paper towels and serve warm.
