2 cups rolled oats
1 cup chunky peanut butter
3 ripe bananas
1/2 cup honey or maple syrup
1/2 teaspoon vanilla extract
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup chocolate chips (optional)
Instructions
Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking dish.
In a mixing bowl, mash the bananas until smooth.
Add rolled oats, peanut butter, honey or maple syrup, vanilla extract, baking powder, and salt to the bananas, and mix until everything is well combined.
If desired, fold in chocolate chips.
Spread the mixture evenly in the prepared baking dish.
Bake for 25-30 minutes or until golden brown and set.
Allow to cool before cutting into bars.
Notes
For a vegan option, use maple syrup instead of honey.
