  • 1 pound ground turkey
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 2 cups mixed vegetables (frozen or fresh)
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the ground turkey over medium heat.
  2. Add the carrots, celery, onion, and garlic, and cook until softened.
  3. Stir in the broth, diced tomatoes, and mixed vegetables.
  4. Add the dried basil and oregano, and season with salt and pepper.
  5. Bring to a boil, then reduce heat and simmer for 30 minutes.
  6. Adjust seasoning and serve hot.

Notes

  • For added flavor, consider adding a bay leaf while simmering.
  • This soup freezes well; just leave out the pasta if you’re adding any.
