Vegetarian Lasagna

A delicious and easy vegetarian lasagna recipe perfect for homemade lovers.

  • 2 cups ricotta cheese
  • 3 cups marinara sauce
  • 9 lasagna noodles
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups chopped spinach
  • 1 egg
  • 1 teaspoon dried oregano
  • 1 teaspoon salt

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix together ricotta cheese, egg, oregano, and salt.
  3. In a baking dish, spread a layer of marinara sauce on the bottom.
  4. Place 3 lasagna noodles over the sauce.
  5. Add half of the ricotta mixture, half of the spinach, and one-third of the mozzarella.
  6. Repeat layers, ending with remaining noodles and marinara sauce on top.
  7. Add remaining mozzarella and sprinkle Parmesan over the top.
  8. Bake covered for 30 minutes, then uncover and bake for an additional 15 minutes.
  9. Let sit for 10 minutes before serving.

Notes

  • This lasagna can be made ahead of time and stored in the refrigerator.
  • Feel free to add other vegetables like zucchini or mushrooms.
