  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 can (28 ounces) crushed tomatoes
  • 6 cups vegetable broth
  • 8 ounces lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups spinach, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until softened.
  2. Stir in oregano and basil, cooking for another minute.
  3. Add crushed tomatoes and vegetable broth; bring to a boil.
  4. Add lasagna noodles and simmer until tender, about 10-12 minutes.
  5. Stir in ricotta, mozzarella, and Parmesan cheeses until melted and combined.
  6. Add spinach and cook until wilted. Serve hot.
