Weeknight Spinach and Ricotta Lasagna

A quick and easy recipe for a delicious spinach and ricotta lasagna that’s perfect for weeknight dinners.

Ingredients

  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 3 cups fresh spinach
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions.
  3. In a bowl, mix ricotta cheese, spinach, garlic powder, salt, and pepper.
  4. Spread a layer of marinara sauce on the bottom of a baking dish.
  5. Layer 3 lasagna noodles, followed by half of the ricotta mixture, a layer of marinara sauce, and a layer of mozzarella cheese.
  6. Repeat the layers, finishing with noodles, marinara sauce, and sprinkle with parmesan cheese.
  7. Cover with foil and bake for 25 minutes.
  8. Remove the foil and bake for an additional 15 minutes until the cheese is bubbly.
  9. Let it cool before serving.

Notes

  • For a creamier texture, add a layer of béchamel sauce if desired.
  • Feel free to add other vegetables like zucchini or mushrooms.
