Wonderful Coffee Cake Muffins with a 1-Minute Crumble Topping

These Wonderful Coffee Cake Muffins are topped with a quick and easy crumble topping, making them perfect for breakfast or a sweet treat!

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup sour cream
  • 1 large egg
  • 2 tbsp unsalted butter, melted
  • 1/2 cup brown sugar
  • 1/2 tsp ground cinnamon
  • 1/4 cup rolled oats

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, mix flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together sour cream, egg, and melted butter. Combine wet and dry ingredients.
  4. In a separate bowl, mix brown sugar, cinnamon, and oats for the crumble topping.
  5. Fill muffin cups with batter, then sprinkle crumble topping on each.
  6. Bake for 18-20 minutes, or until a toothpick comes out clean.
  7. Let cool before serving.

Notes

  • For a lighter muffin, you can substitute half of the all-purpose flour with whole wheat flour.
