These Zimt-Schnecken-Muffins are a delightful twist on classic cinnamon rolls, making for an easy and delicious treat.

  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda

  • 1 teaspoon ground cinnamon

  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1/2 cup brown sugar, packed
  • 1 tablespoon ground cinnamon (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine the flour, sugar, baking powder, baking soda, salt, and 1 teaspoon of cinnamon.
  3. In another bowl, whisk together the melted butter, eggs, vanilla extract, and milk.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  5. In a small bowl, mix the brown sugar and 1 tablespoon of cinnamon for the filling.
  6. Fill each muffin liner halfway with batter, sprinkle a small amount of the cinnamon filling, and then top with more batter until almost full.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  8. Let cool for a few minutes before transferring to a wire rack.

Notes

  • For extra flavor, consider adding nuts or raisins to the filling.
